Recipe of the Week: Lazy Aunt Susan’s Mug Omelet

Ingredients

  • 2 Eggs
  • 1 tbsp. milk
  • Toppings (as desired):
  • Shredded cheese
  • Chopped ham
  • Chopped cooked bacon
  • Cooked sausage crumbles
  • Pinch of salt
  • Pinch of pepper

Directions:

Take your favorite microwave–safe coffee mug and spray with non–stick cooking spray if available. Then, crack two eggs into cup. Add milk; then beat eggs with a fork until well–mixed.

Microwave for 1 minute, then stop to sprinkle with desired toppings. Microwave again for 30 to 60 more seconds or until egg is cooked. Season with salt and pepper, if desired. Enjoy!
