Chocolate Marshmallow Fudge
Ingredients:
1 spray cooking spray
1 2/3 cup sugar
2/3 cup fat-free evaporated milk
2 tbsp reduced-calorie margarine
12 oz semisweet chocolate, chopped (about 1 1/2 cups)
14 large marshmallows
Instructions:
Coat an 8-x-8-inch pan with cooking spray. In a medium-size saucepan, stir together sugar, evaporated milk and margarine; bring to a boil over high heat. Reduce heat to medium-low and cook, stirring constantly, for about three minutes. Stir in chocolate and marshmallows; remove pan from heat and stir until smooth.
Pour mixture into prepared pan and refrigerate until firm, for about two hours. Cut into 36 1 1/3-inch squares and serve. Yields one piece per serving.
Dark Chocolate Cake
Ingredients:
1 spray cooking spray, flour
(baking) variety suggested
2 cup all-purpose flour
1 1/3 cup sugar
1 1/2 tsp baking soda
2/3 cup unsweetened cocoa
1/2 cup unsalted butter, melted
1 1/2 cup hot water
1 tsp vanilla extract
1 cup sauerkraut
1 tsp unsweetened cocoa
Instructions:
Preheat oven to 350°F. Coat a bundt pan with cooking spray. In a large mixing bowl or in the bowl of an electric mixer, combine flour, sugar, baking soda and cocoa. Add melted butter, hot water and vanilla extract; mix well. Add sauerkraut and blend thoroughly. Pour batter into prepared pan; bake in center of oven until a tester inserted in center of cake comes out clean, about 55 to 60 minutes. Cool cake in pan for about 20 minutes and then turn out onto a baking rack to cool completely. Sprinkle with 1 teaspoon of cocoa powder before slicing into 14 pieces.
